Actually, now that I think about it, I’d assume the Toronto police can ask for Apple’s cooperation to watch for the serial numbers of the stolen iPhones and see if they get registered on iTunes.

Yes, what about the IEMI’s? The police can get a warrant and ask Rogers or Fido to release the information on the people who have used the phones.
